Mini Ham and Cheddar Quiches on a Biscui

These are really beautiful. You make them in those little springform pans and when you remove the pans, the resulting quiche is perfectly round and so pretty. The biscuit crust is a nice surprise and very easy to do. Marcia says not to brown the biscuit crust, but I had them in my toaster oven, so they got a little far beyond what she calls for and they were fine! You can certainly vary the add-ins - or use more cheese or ham. A variation that I think would be really good is to use sausage instead of ham and to serve with some sausage gravy.
List of Ingredients
12 T. Bisquick
2 1/2 T. butter, divided
5 1/2 T. milk
1 small onion, diced
8 slices deli ham, diced
1 c. cheddar cheese, shredded
6 eggs
1 1/2 c. milk or half and half
Recipe
Preheat the oven to 350 degrees.
Spray 4 small springform pans with cooking spray. Melt 2 T. butter. Mix the Bisquick, melted butter and the 5 1/2 T. milk to make a thick dough. Spread it around the bottom of the pans and bake for 10 minutes until set, but not browned.
Saute the onion in the remaining 1/2 T. butter until soft and browned and divide among crusts. Add the ham to the pan and saute until lightly browned; divide among crusts. Add shredded cheese. Mix the eggs and milk or half & half. Add to pans.
Bake for about 30 minutes, until eggs are set and pass the knife test.
Let rest for 5 minutes, run a knife around the sides and open the latch on the pan. Remove the bottom of the pan before serving.
Serves 4.
