    I used to make this fairly often. I just rediscovered the recipe and remembered how good it was. This makes a great breakfast, lunch or dinner. You could easily add some chunked up ham to the eggs before you pour on the cheese sauce. Just make sure that the ham is hot since it just spends a couple of minutes under the broiler. Add a salad and some crusty bread and dinner is ready in less than half an hour! Double the recipe and you have a lovely and inexpensive company brunch dish. Make the sauce while the eggs are boiling so that everything is hot and ready at the same time.

    List of Ingredients




    6 eggs, hard boiled – still hot
    2 oz. butter
    2 T. flour
    4 oz. grated cheese – Cheddar, Gruyere, etc.
    1/2 pint hot milk
    Salt and pepper
    A couple of dashes of hot sauce

    Recipe



    Preheat the broiler. Cut the eggs in half and place in an oven-proof dish.

    Melt butter in a small saucepan over medium heat. Add flour and make a medium roux. Add hot milk and stir until it thickens. Season with salt and pepper and cook, stirring, another 2 minutes. Add 3 oz. of the cheese and stir to melt. Add hot sauce. Pour over the eggs and sprinkle with the remaining cheese. Place under the broiler briefly, until bubbly and browned.
