    Plastic Wrap Poached Eggs

    This was an experiment. I heard about the method on eGullet.org. What you do is make big squares of 2 layers of plastic wrap. Tuck it into a shallow bowl and crack an egg into it. Gather the edges and tie with kitchen string, making little egg baggies. Drop the eggs into boiling water. The instructions say to cook for 2 1/2 minutes. They were basically a bag of snot at that point. I think that 5 minutes will be the right amount of time.

    The eggs are lovely looking – no jellyfish tentacles. I just need to work on the timing.


    NOTE: Skip and I have both had issues with these sticking to the plastic wrap. Next time I try them, I will try spraying the wrap with oil spray first.
