Potatoes w/ Egg & Meat

Recipe Introduction
Ugly name, good dish! This is just simple, easy comfort food. Makes a great breakfast or weeknight dinner! I actually had some left over tater tots and threw those in instead of the potatoes!
List of Ingredients
¼ lb. bulk pork sausage
1 T. vegetable oil
2 medium potatoes, peeled and diced
4 eggs, slightly beaten
8 (6”) flour tortillas
Picante sauce
Recipe
Brown sausage in a large nonstick skillet, stirring until it crumbles. Drain and set aside.
Heat oil in skillet; add potatoes, and cook until tender, stirring often. Return sausage to skillet; pour eggs over potatoes and sausage. Draw a spatula across bottom of skillet until egg forms large curds; then remove skillet from heat.
Heat tortillas according to package directions. Spoon potato mixture even down the center of each tortilla; top with picante sauce. Roll up tortillas, and serve immediately.
Serves 4.
