This is a wonderful, simple and delicious fish dish. Halibut is very expensive, so I don’t know how often I’ll serve it, but this crumb topping is so good, I can use it on any firm, white fish. The only change that I made was to add the zest from a lemon to the crumb mixture.
4 Halibut filets
2 c. fresh bread crumbs
3 T. butter
2 garlic cloves, minced
1 1/2 T. minced parsley
Salt and pepper
1 lemon – juice and zest
Recipe
Heat the oven to 450 degrees. Sauté the bread crumbs and garlic in the butter. Season with the parsley, salt, pepper and the lemon zest. Place the fish in a buttered baking dish. Top with the crumb mixture and sprinkle with lemon juice. Bake until done – about 10 minutes.
