Liamsaunt on eGullet.org made this and it looked so good. She sent me directions and said that it was an Ina Garten recipe from “Modern Comfort Food”. I’ll just credit Liamsaunt since I don’t have access to that cookbook. She used individual oven-proof dishes, which I don’t have. So, I used my largest oven-proof sauté pan. You could also just use a casserole. I used frozen fish from Wegman’s, but I’d like to try fresh from Yellow Umbrella sometime. Be careful not to overcook. The original recipe calls for cod, so you could use that, too.
List of Ingredients
4 Haddock or Cod fillets (one fillet per serving)
Olive oil
Salt and freshly ground black pepper
6 T. crushed Ritz cracker crumbs
6 T. panko breadcrumbs
2 cloves garlic, finely minced
2 T. minced parsley
3 T. butter, melted
1/2 c. white wine
1/4 c. lemon juice
Recipe
Mix both crumbs, garlic, parsley, and butter in a small bowl.
Heat oven to 400F. Rub fillets with olive oil and sprinkle with salt and pepper. Place in oven-proof dish or dishes (see note) and in the oven for 10 minutes.
Remove from the oven. Add 2 T. white wine and 1 T. lemon juice to each fillet and top with crumbs. Return to the oven for another 8-10 minutes.
Serves 4.
