3 (12 inch) untreated cedar planks
1/3 cup vegetable oil
1 1/2 tablespoons rice vinegar
1 teaspoon sesame oil
1/3 cup soy sauce
1/4 cup chopped green onions
1 tablespoon grated fresh ginger root
1 teaspoon minced garlic
2 (2 pound) salmon fillets, skin removed
Recipe
The planks should be soaked in warm water for at least an hour and up to two.
Mix together the ingredients except for the salmon. Place the fish in the marinade and turn coat. Cover and refrigerate for 15 minutes to one hour.
Heat the grill on medium. When fully heated place the planks on the grill. When the wood starts to smoke and crackle place the salmon on the planks. Discard the marinade. Cover and grill for about 20 minutes [I’d start checking it at 12 minutes]. The fish should flake, but not fall apart. There will be carry-over cooking.
