Ginger Glazed Mahi Mahi

This glaze is delicious and the recipe is perfect for a weeknight dinner since everything goes so fast. Unfortunately the fish I got was not the best. I will be trying this again with some good quality fish. This is nice served with fried rice and sautéed snow peas.
List of Ingredients
3 tablespoons honey
3 tablespoons soy sauce
3 tablespoons balsamic vinegar
1 teaspoon grated fresh ginger root
1 clove garlic, crushed or to taste
2 teaspoons olive oil
4 (6 ounce) mahi mahi fillets
salt and pepper to taste
1 tablespoon vegetable oil
Recipe
In a shallow glass dish, mix the honey, soy sauce, vinegar, ginger and olive oil. Salt and pepper the fish fillets and put them in the dish. Cover and refrigerator for 20 minutes.
Heat the vegetable oil in a large skillet on medium-high heat. Reserve the marinade and fry the fish for 4-6 minutes per side, until done. Place the fillets on a platter and keep warm.
Put the marinade in the skillet over medium heat and boil until it reduces to a glaze consistency. Spoon the glaze over the fish.
