    Betty Crocker Summer Appetizers 2010

    A great tasting and easy appetizer. I did these for July 4th and they just vanished!

    List of Ingredients




    1 1/2 lb. cooked, deveined, peeled shrimp - leave tails on
    1/4 c. soy sauce
    2 t. chopped gingerroot
    1/4 c. white vinegar [try rice wine vinegar]
    2 T. sugar [I used Splenda]
    2 T. sake or apple juice
    1/2 t. salt
    2 medium green onions, thinly sliced - for garnish

    Recipe



    Place the shrimp in a quart sized ziplock bag. In a 1-quart saucepan, bring the soy sauce to a boil. Stir in ginger and reduce to a simmer. Cook until reduced by half. Stir in the vinegar, sugar, sake and salt. Add to shrimp. Refrigerate for 2 hours, turning the bag often.

    Drain shrimp and garnish with green onions.
