The perfect way to cook shrimp for shrimp cocktail or any recipe needing cooked shrimp. So much tastier than boiled or steamed. I've also added Old Bay seasoning.
2 pounds (12 to 15 count) shrimp, peeled and deveined
1 tablespoon good olive oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Recipe
Heat oven to 400F.
Preheat the oven to 400 degrees.
Toss the shrimp with the olive oil, salt, and pepper. Place on a baking sheet (I always line it with non-stick foil) and roast for 8-10 minutes, until the shrimp is just cooked.
