    Liamsaunt’s Broiled Sole

    She made this and posted a picture on the dinner thread at eGullet and it looked so good that I asked her for directions. Couldn’t be simpler!

    List of Ingredients




    Sole (or other mild white fish – I used flounder)
    Butter, melted
    Oil or oil spray for pan
    S&P
    Fresh breadcrumbs
    Fresh parsley
    Lemon juice

    Recipe



    Heat your broiler. Line a baking sheet with non-stick alumninum and spray lightly (or brush) with spray oil. Brush both sides of fish with melted butter and place on the baking sheet. Season the fish with salt and pepper and sprinkle each fillet with a couple of teaspoons of the breadcrumbs and parsley.

    Broil on the highest or next to highest rack in the oven (depending on how high your broiler gets), until the fish is properly done. Remove from the oven and sprinkle with lemon juice before serving.
