    Momma's Salmon in Puff Pastry

    My mother makes this and it is so good and easy to do. Her notes are in brackets [ ]. She talks about cucumber sauce at the end. I don't have the recipe for that right now and remember that she wasn't happy with it the last time that she made it - you could just use tzatziki.

    List of Ingredients




    1 lb. salmon filet (about 1 inch thick) skinned
    Butter flavored cooking spray
    1/4 tsp each of salt, garlic powder and pepper
    1-1/2 cups (1/2 inch) cubed peeled red potaoes
    3/4 cup evaporated skim milk
    1/2 cup thinly sliced leek
    2 tsps water
    1/2 tsp cornstarch
    3 tblspns grated Parm cheese
    Puff Pastry [Original recipe calls for phyllo but I'm always used puff pastry which is easier to handle and won't go soggy]

    Place salmon on a broiler pan coated with cooking spray. Sprinkle with salt, garlic powder and pepper evenly over fillet. Broil 10 minutes or until fish flakes easily when tested with a fork. Cut fillet into small chunks and set aside.

    Preheat oven to 350 degrees.

    Combine potatoes, milk and leek in a small saucepan; bring to a broil. Cover, reduce heat and simmer 10 minutes or until potato is tender. [NOTE: I had a hard time getting the potatoes cooked this way - now I just cook them separately and add to the milk and leek mixture when they are beginning to get soft.]

    Combine water and cornstarch in a small bowl - stir well - add to the pan. Bring to a boil and continue cooking 1 minute stirring constantly. Gently stir in the fish chunks and cheese. Set aside.

    Roll out a sheet of puff pastry. Spoon potato mixture along 1 long edge of pastry, leaving a 2 inch border. Fold over the short edges to cover 2 inches of potato mixtue on each end.

    Starting at long edge with 2 inch border, roll up jelly roll fashion. (Do not roll tightly or srudel may split.) Place strudel seam side down, on a jelly roll pan coated with cooking spray. Score diagonal slits into top of strudel using a sharp knife. Lightly spray strudel with cooking spray. {Kim's note: or with an egg yolk wash}

    Bake strudel at 350 for 20 minutes or until golden brown. Serve warm.

    Serve with cucumber sauce on the side.

    Yield: 8 servings.
