Orange Roughy in Citrus Sauce – NO FAT

List of Ingredients
1 lb. orange roughy
¼ c. frozen orange juice concentrate
2 T. lemon juice
1 t. dried dill weed
1 t. paprika
2 T. minced fresh parsley
½ c. water
3 T. + 3 T. no sugar orange marmalade
1 t. arrowroot
Recipe
Place fish in shallow non-metal casserole.
Combine remaining ingredients except marmalade and arrowroot and mix to dissolve orange juice concentrate. Reserving ½ c. for sauce, pour remaining mixture over fish. Cover fish and marinate in refrigerator 45 minutes, or longer, turning at least once.
Preheat broiler.
Remove fish from the marinade and place on broiler pan. Add 3 T. of marmalade to marinade and heat. Broil fish 4” from heat 10 – 15 minutes, until fish flakes, basting with marinade several times during cooking.
While fish is broiling, heat reserved orange sauce in small saucepan with arrowroot and remaining 3 T. marmalade until the sauce begins to thicken.
Transfer fish to serving dish. Pour sauce on fish or serve on side.
Serves 4.
