Oven Baked Cod w/ Lemon Pesto

Recipe Introduction
Lemon pesto is a Trader Joe’s product, so who knows how long it will be available. But this was delicious and incredibly easy. There are copycat recipes available online, so I can still make it when TJ’s takes it away. One of my “set of directions rather than a precise recipe” recipe! I happened to have some lemon/garlic/butter sauce leftover and used it, but you could make the Lemon Sauce for Chicken Cutlets in the sauce section. Or just melted butter. Or just lemon wedges.
List of Ingredients
4 – 8-oz. cod fillets
Lemon pesto
Freshly ground black pepper
Panko crumbs
Chopped parsley, for garnish
Lemon sauce, melted butter, lemon wedges – optional, see note
Recipe
Heat oven to 400F. Line a pan with non-stick foil. Place the fish in the pan. Brush a thick coat of the pesto on the top of each fillet and then press a layer of panko crumbs into the pesto. Season with pepper.
Bake until firm – 12-15 minutes depending on the size of the pieces. Serve immediately with any desired sauces.
Serves 4.
