Seafood/ Veg. Saute w/ Chardonnay Glaze

Recipe Introduction
Rice is the obvious choice as a side dish here, but angel hair pasta is good, too.
List of Ingredients
- 4 green onions or 1 leek - jullienned
- 1 1/2 t. olive oil
- 2 garlic cloves - minced
- 8 oz. shrimp - peeled
- salt and pepper to taste
- 8 oz. sea scallops - quartered
- 3 slender carrots - jullienned
- 2/3 c. chardonnay - or other dry white wine
- 2 T. lemon juice
- 2 T. (total) minced fresh parsley, chives and tarragon
Instructions
- Heat oil in saute pan. Add garlic, saute 30 seconds. Add shrimp. Cook without stirring for one minute.
- Add scallops, green onion, carrots and salt and pepper. Toss for a minute. Add wine. Reduce heat.
- Cover and simmer 4 minutes, stirring twice.
- Transfer seafood and vegetables to a platter. Reduce liquid in pan to 1/2 c. Add juice and herbs. Spoon over seafood.
