I am giving this the title they give it in the book, in spite of my pet peeve about the phrase ‘shrimp scampi’. It’s like saying ‘chicken poultry’. But this is good stuff! It is just the most simple, elegant, delicious scampi! Buy the best shrimp you can find! You won’t be sorry! Serve with plenty of good bread to mop with and pasta or rice.
List of Ingredients
6 T. sweet butter, at room temperature
¼ c. olive oil
1 T. minced garlic
1 T. minced shallots
2 T. snipped fresh chives
Salt and pepper, to taste
¼ t. paprika
2 lb. large shrimp, peeled and deveined
Recipe
Preheat the broiler.
Combine the first 7 ingredients. Toss the shrimp in the mixture until thoroughly coated.
Broil the shrimp as close as possible to the flame for 2 minutes on each side. Serve immediately.
Serves 4.
