Originally from epicurious.com, this is a wonderful blend that is much greater than the sum of it’s parts. It is simply shrimp, scallions and corn cut off the cob sautéed in butter and topped with fresh basil. That’s it – 5 ingredients. It couldn’t be more fresh tasting – summer on a plate. I find the taste of raw onions unpleasant, so I sautéed the scallions with the corn and shrimp. Serve plenty of good, crusty bread with this.
List of Ingredients
2 tablespoons unsalted butter
Kernels & 'milk' from 2 ears corn
1/2 pound shelled large shrimp
4 scallions, chopped
1/4 cup fresh basil, thinly sliced
Recipe
Melt the butter in a large non-stick sauté pan over medium-high heat. Add the corn, 'milk' and shrimp and, tossing often, cook until the shrimp are cooked through - about 5 minutes. Add the scallions and the basil and serve immediately.
