Recipe Introduction
I originally put this recipe on the site in 2002. When I made it in 2017, we decided that the tomato paste tends to overpower the other ingredients - you especially lose the citrus. Next time I make it, I think that I will back off the tomato paste (maybe only 1/2 T) and add in the zest from both the orange and the lime. NOTE: As I always do when I use jalapenos, I blackened them on the grill, scraped off the skin and removed the seeds and membranes.
List of Ingredients
2 lb. large shrimp
1 large onion - finely chopped
2 garlic cloves - minced
2 jalapeno peppers - seeded and minced
2 T. olive oil
1/4 c. orange juice
1/4 c. lime juice
1/2 t. salt
1/4 t. cumin
1/4 c. tequila
1/2 c. whipping cream
1 T. tomato paste
1/4 c. chopped cilantro - fresh
hot cooked rice
Recipe
Saute onion, garlic and japs in oil until tender.
Add shrimps, orange juice and next 3 ingredients; saute 3 minutes.
Stir in tequila and next 3 ingredients and cook until slightly thickened.
Serve over rice.
Serves 4-6.
