This recipe makes apples very similar to Cracker Barrel. They are tender and taste good. They do not have the deep caramelization that I really prefer. I’m still searching for those! But these are very good. I did a few things different. The original recipe calls for Golden Delicious – an apple I almost never have. Unless they are truly orchard fresh, I find they fall apart, and the flavor is insipid. I used what I had (probably Gala and maybe a Macintosh). The recipe also doesn’t call for the apples to be peeled. I don’t care for cooked apple peel at all, so I peeled mine.
4 tablespoons (1/2 stick) unsalted butter
1 1/2 pounds apples (about 3 large), cored and sliced 1-inch thick
1/4 cup packed light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon kosher salt
1/4 cup plus 2 tablespoons apple juice or apple cider, divided
1/2 teaspoon cornstarch

In a large skillet over medium heat, melt the butter. Add the apples, sugar, cinnamon, nutmeg, and salt. Toss well so that these all coat the apple slices. Add the 1/4 cup of apple cider.
Cover. Cook until the apples are tender, but not disintegrating. Stir occasionally. This will take 15-20 minutes.
When done, put the apples in a serving bowl, leaving the liquid in the skillet. Mix the 2 tablespoons apple cider with the cornstarch and add to the liquid in the pan. Stir until thickened and add to the apples. Toss to coat and serve warm.
