We were lucky enough to find fresh figs at the farmer’s market and I found this recipe online. This made a lovely breakfast. I used toasted almonds as I didn’t have any pistachios.
1 tablespoon honey, plus more for drizzling
8 ounces fresh figs, halved
2 cups plain low-fat Greek yogurt
Pinch ground cinnamon
1/4 cup chopped pistachios
Recipe
Over medium heat in a skillet, heat the honey. Place the figs, cut sides down, into the honey and cook about 5 minutes, until they are caramelized. No need to turn them.
Place 1/2 c. of yogurt into each of 4 bowls. Sprinkle with most of the nuts (save a few for the top). Spoon the figs onto the yogurt and drizzle with the honey from the pan (add more honey, if you like). Sprinkle with the reserved nuts.
Serves 4.
