    Jo's Taffy Apple Salad

    Recipe Introduction


    So good. Rich and sweet and creamy. A real Southern delight! I like to add chopped salted peanuts to this in place of the pecans.

    This is started the night before you want to serve.


    List of Ingredients


    • 1 lg. can pineapple chunks in heavy syrup
    • 2 c. mini marshmallows
    • 1 T. cornstarch
    • 1 1/2 T. vinegar
    • 1 egg
    • 3/4 c. sugar
    • 8 oz. Cool Whip
    • 6 apples, cored and chopped - unpeeled
    • 1 1/2 c. pecans


    Instructions


    1. The night before serving, drain pineapple, reserve syrup. Mix pineapple and marshmallows. Cover and refrigerate.
    2. Mix pineapple syrup, cornstarch, sugar, egg and vinegar. Simmer over low heat until thickened (10 – 15 minutes). Cool and refrigerate overnight.
    3. Next day, mix both bowls with Cool Whip. Add cut up apples and nuts. Chill before serving.


    Final Comments


    Serves 6-8.
