    These are SO much better than store bought and very, very easy to make. I'll double up next time, because while it was supposed to make 6 (2 oz.) popcicles, I ended up with only 4. I made mine with Splenda so that Mike could share them.

    List of Ingredients




    2 T. (21 grams or 3/4 ounce) semisweet chocolate chips or chopped semisweet chocolate
    1/3 C. (67 grams or 2 1/3 ounce) sugar
    1 T. (7 grams or 1/4 ounce) cornstarch
    1 1/2 T. (8 grams or 1/4 ounce) unsweetened cocoa powder
    1 1/4 C. (300 ml) whole milk
    Pinch of salt
    1/2 t. (3 ml) vanilla extract
    1/2 T. (7 grams or 1/4 ounce) unsalted butter

    Recipe



    In a medium non stick saucepan over VERY low heat, melt the chocolate. Stir constantly until completely melted. Mix in sugar, cornstarch, cocoa powder, milk and salt and raise heat to medium. Cook, stirring frequently until the mixture thickens (between 5 and 10 minutes). Remove from heat and mix in the vanilla and butter.

    Cool slightly and then pour into the molds. If you are using wooden popsicle sticks, let freeze before inserting the sticks. Otherwise put the holders in the molds and freeze until completely solid.
