Recipe Introduction
We had this at Lauri’s on Mother’s Day 2019. A really refreshing and light dessert. Some of us tasted it with a shot of vodka or coconut rum and that was popular. Most granita recipes instruct you to stir every 30 minutes after the initial hour, but Lauri didn’t do that and her texture was perfect.
List of Ingredients
1 cup water
1/2 cup sugar
Zest from 1 lemon
1/2 cup lemon juice
3/4 cup lemon/lime seltzer
Recipe
Put the water, 1/2 cup of sugar and lemon zest in a small saucepan and bring to a boil. Reduce heat and simmer for 5 minutes. Remove from heat and cool completely.
Mix together the syrup, lemon juice, and seltzer. Pour into a bowl or shallow pan. Freeze for one hour. Stir to mix well and then freeze for another 3 hours. Set out 15 minutes before serving.
Makes about 3 cups.
