    Baby Back Ribs

    My version of a recipe on the Spend With Pennies website.

    Recipe Introduction


    These aren’t grilled or smoked ribs. But they are good – perfect when you are short on time. I have the 8 quart IP and think that I could easily do 2 racks of ribs. I cooked mine for the recommended time of 23 minutes and it was slightly too long. They weren’t mushy, but a little too soft. Next time, I’ll do them for 20. We don’t do that “fall off the bone” nonsense in this family. Mike and Jessica both found the taste a tiny bit bitter but couldn’t narrow it down. So, I’m not sure if it was the rub or the garlic or the sauce (I used Sweet Baby Ray original). The original recipe calls for the optional addition of Liquid Smoke, but we really hate any amount of that. If you are ok with it, feel free to give it a try. I normally don’t use Baby Backs, but they fit well into the IP.

    List of Ingredients




    1 rack baby back ribs about 1 ½- 2 pounds
    1 cup broth or water
    4 cloves garlic sliced
    1 onion sliced
    6 tablespoons dry rub – I used Penzey’s BBQ 3000
    Barbecue sauce

    Recipe



    Pat the ribs dry with paper towels. Remove the membrane from the back. And cut into 2-3 rib bones. Sprinkle and rub with the rub.

    Put the rack in the bottom of the IP and add the broth or water (and liquid smoke, if you like). Place the ribs upright in the IP, leaning against the side. Sprinkle with the onion and garlic.

    Close the lid and set for 20-23 minutes (see my note above) pressure cook. When they finish let the IP naturally release for 5 minutes and heat the broiler of your oven. Release the rest of the pressure by opening valve.

    Put the ribs on a foil lined baking sheet and brush with your favorite BBQ sauce. Place under the broiler and broil until slightly charred (you can also do this step on a grill). Pass more sauce with the ribs.
