    Recipe Introduction


    This recipe is for when you need tender, juicy chicken breasts for a recipe. Janet gives recipes for 3 different interesting sauces in her book that I haven’t tried yet. I’ve just extrapolated directions for plain cooked chicken. I’ve used them for casseroles and salads and the technique works really well.

    List of Ingredients




    2 (14-16 oz.) boneless, skinless chicken breasts
    1/2 t. kosher salt
    A few grinds of black pepper
    1/2 c. chicken stock
    3 T. dry white wine

    Recipe



    Season the chicken with the salt and pepper. Pour the chicken stock and wine into the IP. Place a trivet or shallow steamer basket into the IP. Put the chicken breasts on the trivet. Lock the lid onto the IP. Pressure cook on LOW pressure for 5 minutes. When done, let pressure release naturally for 8 minutes. Then use the quick release. Chicken is now really to use for your recipe.
