Brisket with Gravy

Recipe Introduction
This is the perfect comfort meal when you are craving tender beef and lashings of BEEFY gravy. The Instant Pot is always surprising me – I just have a hard time “believing” in it. Tender, fall apart brisket in 70 minutes? No way. But it works. This recipe makes LOTS of gravy – you could cut back on the liquids or do what I do: make soup the next day. If you serve it with noodles, you have the basics of soup already. I just added a small bag of frozen peas and carrots and it was soup. It is also lovely with mashed potatoes, of course. I didn’t use any salt in the preparation, and I used no-salt beef broth. I suspected that there would be plenty in the dry soup mix and gravy mix. I was correct.
List of Ingredients
3 lb. brisket, trimmed of the fat that is on one side, cut into 4-inch sections
pepper
2 tablespoons oil
2 packets dry onion soup mix (I used Lipton’s Beefy Onion)
2 cups beef broth (low or no sodium)
1 packet of brown gravy mix (powdered)
Bisto or cornstarch slurry, if needed
Recipe
Pepper the pieces of brisket. Set the IP to “sauté”. Add the oil to the IP and sear the meat on all sides until nicely browned. Hit the “cancel” button. Sprinkle the soup mix over the meat and pour in the broth.
Cover the IP and set to “Pressure Cook” for 70 minutes. At the end of the cook, allow to naturally release for 15-20 minutes. Then do a quick release and take off the lid when the float valve drops.
Transfer the beef to a platter or baking dish and shred with two forks or, if you would like larger pieces, carefully cut it into slices. Remove any gobs of fat from the beef and from the cooking liquid in the IP.
Set the IP to “Soup” setting. Shake the gravy mix up in a jar with 1 cup of cold water. When the liquid in the IP begins to boil add this to the IP. Let is boil a couple of minutes to bring it to maximum thickness. If you would like it thicker, this is the time to add Bisto or the cornstarch slurry. Add the shredded/sliced beef to the boiling liquid to bring it up to temperature again. Turn off the IP and serve.
Serves 6-8.
