I hadn’t ever made canned green beans in the IP, only fresh. So, I wasn’t sure if they would work. I did some internet research and took a chance. They were very good – and incredibly fast. I like my beans REALLY done, so the 5 minutes suggested in most of the recipes wasn’t enough for us – you should check them at 5 minutes and see if they are done to your liking. Most of the recipes used bacon as their fat and flavoring – I know from experience that we prefer bacon grease (Benton’s, if we have it) and country ham. Some of the recipes suggested sautéing some chopped onion (1/2 – 1 cup) with the bacon. I didn’t do that, but will try it sometime and report back.
List of Ingredients
2-28 oz. cans Italian Green Beans, with liquid
4-6 oz. sliced country ham, torn into small pieces
2 T. GOOD bacon grease
2 T. cider vinegar
3 T. brown sugar, or to taste
Salt and pepper, to taste
Recipe
Set IP to “sauté”. Add the bacon grease and melt. Add the country ham and sauté until the ham darkens and curls slightly. Pour in the vinegar and scrape up any browned bits on the bottom of the pan. Add the beans with the liquid in the can. Add the brown sugar and a sprinkling of salt and pepper (you can taste and adjust the seasonings after cooking). Close and lock the IP and pressure cook on HIGH for 5-8 minutes. Test for doneness and seasoning and serve hot.
