Recipe Introduction
These are the best pear preserves I have ever tasted. My grandmother learned to make these from her mother who learned how from her mother as a young girl. This means that these preserves have been being prepared the same way for well over one and a half centuries! They are VERY sweet – almost candied and incredibly good on hot biscuits!
List of Ingredients
- Pears - peeled, cored and sliced into about ½” wedges
- Sugar
- Lemon juice
- Lemon slices
Instructions
- Toss pear pieces with lemon juice. Add sugar at a ratio of about 3 cups fruit to 1 cup sugar. Toss well and let sit for at least 2 hours, up to overnight.
- Bring pear/sugar mix to a boil over medium heat and cook, stirring often until they are tender and turn red in color.
- Pack fruit into prepared jars about ¾ full and then add lemon slice (1 per jar) and fill with liquid. Cover and refrigerate or process to can.
Final Comments
Grandma Jean says that if there isn’t enough liquid, you could add some water and sugar (3 to 1 ratio still) to the pan and let it boil down. She also says that that hasn’t ever happened to her!
I am going to try adding a slice of ginger to a couple of the jars and see how that turns out.
