Recipe Introduction
The best jelly to serve with the ubiquitous cream cheese and Ritz crackers. This is green (or red, if you like) pepper jelly with the added flavor of hot peppers. Use whatever peppers you like - to add the amount of fire you like. Fresh or pickled.
List of Ingredients
- 4 large (6 medium) green peppers
- 5 or 6 hot peppers
- 1 bottle certo
- 7 c. sugar
- 1 1/2 c. white vinegar
Instructions
- Cut all peppers into piece, discarding seeds.
- Put 1/2 c. vinegar and all peppers through processor until foamy liquid appears.
- Bring peppers, sugar and rest of vinegar to a boil and boil for one minute. Remove from heat. Add certo (both packets). Return to heat and boil 1-2 minutes. Allow to stand, remove any foam.
- Can add green food coloring.
- Pour into jelly glasses and seal with wax.
