Microwave Lemon Curd

This makes great lemon curd and is so fast and easy. While sieving isn’t absolutely necessary unless you see some curdling, I think it would be a good step – mine was a little grainy from the lemon zest, I think.
List of Ingredients
1 cup white sugar
3 eggs
1 cup fresh lemon juice
2 tablespoons lemons zest
1/2 cup unsalted butter, melted
Recipe
Using a microwave-safe bowl, whisk the sugar and eggs until smooth. Add the remaining ingredients and mix well. Cook on 80-100% power for one-minute intervals, stirring well after each minute. When the mixture thickens and coats the back of a spoon, the curd is done. (It will probably take a total of 5-10 minutes depending on the power of your microwave).
Store for up to three weeks in the refrigerator.
Makes about 2 cups.
