Gerry’s Chicken Pineapple Macaroni Salad

Recipe Introduction
I call this Gerry’s because it is as close as I’ve ever been able to come to the pasta salad that my mom’s dear friend, Gerry, used to make. It has always been one of my favorite dishes and I even had the actual recipe once. Unfortunately I lost track of it and didn’t ask Gerry for it before she passed away. But reading the original recipe at Taste of Home made me think of Gerry’s and I made some changes and really like this a lot. The original recipe had corn (???) and green peppers in it. I removed those and added pineapple and a little sour cream.
List of Ingredients
2/3 cup uncooked elbow macaroni
1 cup cubed cooked chicken
1/4 cup sliced celery
1 hard-cooked egg, chopped
2 tablespoon chopped onion
1/2 cup mayonnaise
1/4 cup sour cream
2 teaspoons white vinegar
1/4 teaspoon salt
1/8 teaspoon pepper
Small can pineapple slices, cut into ‘Tidbit’ size
Recipe
Cook macaroni, drain and rinse in cold water to cool.
In a bowl, mix the macaroni, chicken, celery, egg, onion and pineapple. In a small bowl, mix the mayonnaise, sour cream, vinegar, salt and pepper. Pour over macaroni mixture and toss well to combine. Cover and refrigerate.
Serves 2-4.
