    This rub pairs beautifully with ‘Royal Jelly BBQ Sauce’. The next time I try it, I might leave out the mustard seeds (disconcerting to bite down on) and add some garlic.

    List of Ingredients




    ¼ c. mixed peppercorns: black, white, pink
    ¼ c. mustard seeds
    ¼ c. sesame seeds, lightly toasted
    ¼ c. New Mexican ground red chili
    ¼ c. brown sugar
    ¼ c. kosher salt
    ¼ c. Hungarian paprika
    1 dried ancho chile
    1 T. each: cinnamon, cumin, rubbed sage, cayenne, allspice, dried thyme and dried tarragon

    Recipe



    Combine peppercorns, mustard seeds, sesame seeds, salt and the ancho chile in the food processor and pulverize. Combine this mixture with all the other ingredients, taking care to mix carefully as it will cause sneezing. Spread on baking sheet and toast in the oven lightly, at 325 degrees. Store in an airtight container in the freezer.

    Makes more than enough for 2 full racks of spare ribs.
