    Black Beans and Rice

    A cookbook from the 60's, put together by Pan Am stewardesses (that's what they were called then, kids)

    List of Ingredients


    • 2 c. dried black beans, soaked and drained according to directions
    • 1 smoked hambone or hock
    • 8 c. water
    • 4 c. beef or chicken stock
    • 1/4 lb. salt pork - diced
    • pepper
    • 2 cloves garlic - minced
    • 1/4 c. cooked, crumbled pork sausage
    • a couple of dashes of Tabasco
    • 1 onion - chopped
    • 1 tomato - diced
    • 1 T. white vinegar
    • 2 T. olive oil
    • 1/2 c. diced ham


    Instructions


    1. To beans add ham bone, water, stock, pepper and salt pork. Simmer 1 1/2 hours. Remove ham bone and salt pork, discard.

    2. Heat oil in skillet. Saute tomatoes, onions and garlic about 5 minutes. Add tabasco, vinegar, ham and sausage.

    3. Add tomato mixture to beans and simmer, very low, for about 45 minutes. Taste and add additional tabasco and salt, if necessary.



    Final Comments


    Serve with rice.
