Black Beans and Rice

A cookbook from the 60's, put together by Pan Am stewardesses (that's what they were called then, kids)
List of Ingredients
- 2 c. dried black beans, soaked and drained according to directions
- 1 smoked hambone or hock
- 8 c. water
- 4 c. beef or chicken stock
- 1/4 lb. salt pork - diced
- pepper
- 2 cloves garlic - minced
- 1/4 c. cooked, crumbled pork sausage
- a couple of dashes of Tabasco
- 1 onion - chopped
- 1 tomato - diced
- 1 T. white vinegar
- 2 T. olive oil
- 1/2 c. diced ham
Instructions
- To beans add ham bone, water, stock, pepper and salt pork. Simmer 1 1/2 hours. Remove ham bone and salt pork, discard.
- Heat oil in skillet. Saute tomatoes, onions and garlic about 5 minutes. Add tabasco, vinegar, ham and sausage.
- Add tomato mixture to beans and simmer, very low, for about 45 minutes. Taste and add additional tabasco and salt, if necessary.
Final Comments
Serve with rice.
