Way Too Easy Fajitas

List of Ingredients
- 6 Flour Tortillas
- 2 onions, sliced
- 1 bell pepper, cored and sliced
- 2 jalapenos, if desired, cored and sliced
- Frozen, fully cooked chicken slices (enough for 6 fajitas)
- Shredded cheese, Mexican style
- Oil
- 2 T. lime juice, or to taste
- 2 t. fresh cilantro, or to taste
- ½ t. ground coriander seeds
- ½ t. seasoning salt
- ¼ t. garlic powder
Instructions
- Sauté the vegetables at medium heat in the oil, adding the lime juice and seasonings. When vegetables are soft, add the chicken and turn to low. Cover for a couple of minutes to thaw and then turn the heat back up to medium and sauté a few minutes more until everything is hot and the veggies are done.
- Heat the tortillas in the microwave for a few seconds until warm.
- To plate: place a tortilla on a plate, top with cheese, veggies and chicken. Add any other toppings you like. Rolls and top again with cheese. At this point you can microwave for a few seconds to melt the cheese on top.
Final Comments
Serve w/ salsa, sour cream, additional cheese, hot sauce and black beans to top the fajitas.
