Recipe Introduction
This is not really a recipe - it's another one of my 'list of ingredient' dishes. I love macaroni salad, but I don't quite have it right yet. The flavors of this one are great, but the texture is not really where I want it. I love the texture and moistness of deli macaroni salad, but not the flavor. I'll keep trying, but in the meantime, this is a good start. When I took leftovers to the office, they disappeared fast!
List of Ingredients
Macaroni, cooked, drained and cooled
Equal amounts of mayonnaise and sour cream
Dijon mustard
Ham, cut into small pieces
Grated sharp cheddar cheese
Chopped sweet pickles
Rachel's Special Syrup (see below)
Red onion, finely minced
Recipe
You have to do most of this to taste. Mix the mayonnaise, sour cream and mustard well. Add Rachel's syrup a little bit at a time and taste - you want a balance between the sharpness of the Dijon and the sweetness of the syrup. Add to the cooled macaroni and mix well. Add in the ham, cheese, sweet pickles and onion, to taste. Taste and add salt and pepper, as needed. Chill.
RACHEL'S SPECIAL SYRUP
This stuff is, my friend Rachel's secret weapon to fabulous chicken salad. She makes THE best chicken salad I've ever had. She suggests using it on potato salad, too. I have used it in ham salad, salad dressings and pasta salad. It lasts forever and there is usually a jar in the fridge.
1 c. sugar
1/2 c. cider vinegar
5 - 6 cloves
Put in a small saucepan and simmer until the sugar dissolves. Cool and place in the refrigerator in a jar.
