Savory Cannelloni

Recipe Introduction
This is so, so good. All it needs is a good salad and some crusty bread. Yum.
List of Ingredients
- SAUCE:
- 1/2 c. butter
- 1 clove garlic - crushed
- 1/4 c. flour
- 1 1/2 t. chicken boullion granules
- 1/8 t. pepper
- 2 c. half and half
- 1/2 c. combined grated Parmesan and Romano cheese
- CANNELLONI:
- 8 shells
- 2 T. butter
- 3 T. sliced green onion
- 1 - 10 oz. pkg. frozen chopped spinach - thawed and well drained
- 1 c. finely chopped cooked chicken
- 1 c. finely chopped ham
- 1/2 c. combined grated Parmesan and Romano cheese
- 2 eggs, beaten
- 3/4 t. Italian Seasoning
- 1/4 t. pepper
Instructions
- SAUCE: Saute garlic in butter for 3 minutes. Stir in flour and seasonings. Lower heat and gradually stir in half and half, stirring constantly. Bring to a boil over medium heat, stirring. Boil and stir for one minute. Reduce heat to low and add cheese. Stir to melt and set aside.
- CANNELLONI: Parboil shells. Rinse and drain. Set aside. Saute onions in butter. Remove from heat and stir in rest of ingredients. Fill shells with chicken mixture.
- Preheat oven to 350 degrees. Spoon a little sauce over bottom of 2 qt. rectangular baking dish. Place shells in dish. Spoon rest of sauce over shells. Bake 20 minutes. Then broil about 5 minutes until browned and bubbly.
