    Recipe Introduction


    This is so, so good. All it needs is a good salad and some crusty bread. Yum.


    List of Ingredients


    • SAUCE:
    • 1/2 c. butter
    • 1 clove garlic - crushed
    • 1/4 c. flour
    • 1 1/2 t. chicken boullion granules
    • 1/8 t. pepper
    • 2 c. half and half
    • 1/2 c. combined grated Parmesan and Romano cheese
    • CANNELLONI:
    • 8 shells
    • 2 T. butter
    • 3 T. sliced green onion
    • 1 - 10 oz. pkg. frozen chopped spinach - thawed and well drained
    • 1 c. finely chopped cooked chicken
    • 1 c. finely chopped ham
    • 1/2 c. combined grated Parmesan and Romano cheese
    • 2 eggs, beaten
    • 3/4 t. Italian Seasoning
    • 1/4 t. pepper


    Instructions


    1. SAUCE: Saute garlic in butter for 3 minutes. Stir in flour and seasonings. Lower heat and gradually stir in half and half, stirring constantly. Bring to a boil over medium heat, stirring. Boil and stir for one minute. Reduce heat to low and add cheese. Stir to melt and set aside.
    2. CANNELLONI: Parboil shells. Rinse and drain. Set aside. Saute onions in butter. Remove from heat and stir in rest of ingredients. Fill shells with chicken mixture.
    3. Preheat oven to 350 degrees. Spoon a little sauce over bottom of 2 qt. rectangular baking dish. Place shells in dish. Spoon rest of sauce over shells. Bake 20 minutes. Then broil about 5 minutes until browned and bubbly.


    Final Comments
