Peking Chicken Pizza

This is really easy and good. We thought that it would be better with some additional veggies – chopped water chestnuts, bean sprouts, julienne carrots. And maybe hoisin sauce in place of the bbq. Also, I used frozen cooked chicken and it was still very good. This is a good starting place for a yummy pizza!
List of Ingredients
- ½ lb. thin cut boneless, skinless chicken breast
- Extra virgin olive oil, for drizzling
- Montreal Seasoning Mix by McCormick
- 2 T. cornmeal
- 1 pkg. Store bought pizza dough (for 1 12” pie)
- 2 – 3 T. sesame seeds
- 3 T. plum or duck sauce
- 3 T. bbq sauce
- 2 c. shredded Monterey Jack cheese
- 2 scallions, chopped in 1” pieces on an angle
- ¼ red bell pepper, chopped
Instructions
- Preheat oven to 450 degrees.
- Heat a grill pan over high heat. Drizzle oil over chicken and season with grill seasoning blend. Grill chicken 3 – 4 minutes on each side. Slice chicken into very thin strips.
- Sprinkle a pizza pan or baking stone with cornmeal. Press dough into a pizza shell, working all the way to edges of the pan. Sprinkle the edges of your dough with sesame seeds. Cover the pie with 3 T. each plum sauce or duck sauce and bbq sauce. Cover pie with cheese. Top with sliced chicken and scallions and red pepper. Bake 12 – 15 minutes, until crisp and cheese is bubbly.
Final Comments
Serves 8.
I served this with pot stickers and spinach salad with ginger dressing.
