Baked Fruit Stuffed Pork Chops

¼ c. golden raisins, roughly chopped
½ t. grated lemon zest
2 T. lemon juice
½ c. finely diced peeled apple or pear
Salt and pepper
4 very thick loin pork chops
Flour
Vegetable oil
Recipe
Preheat oven to 325 degrees.
Mix 1st five ingredients. Make a pocket in each chop with a small, sharp knife and stuff with the fruit mix. Close with toothpicks. Dust w/ flour. Put a small amount of oil in an oven-safe skillet. Heat oil and brown chops on medium-high heat. Cover skillet with foil and bake for 30 – 40 minutes.
