    Fruit Stuffed Pork Tenderloin

    List of Ingredients


    • 1/3 c. chopped onion
    • 1 clove garlic, minced
    • 1 T. butter
    • 1 small tart apple - peeled, cored, finely chopped
    • 1/4 c. chopped pitted prunes
    • 1/4 c. white wine
    • 3 t. sugar
    • 3/4 t. dried rosemary
    • 3/4 t. dried thyme
    • 1/4 c. cornbread crumbs (can use stuffing mix)
    • salt and pepper, to taste
    • 1 whole pork tenderloin - about 16 oz.
    • 1 clove garlic - minced


    Instructions


    1. Saute onion and 1 clove garlic in butter in sauce pan until tender; about 5 minutes. Add apple and prunes and cook 2-3 minutes. Add wine, sugar and 1/2 t. each rosemary and thyme. Cook, covered, over medium heat until wine is evaporated; about 5 minutes.

    2. Stir in crumbs and salt and pepper.

    3. Cut a lengthwise slit, about 2" deep, in tenderloin.

    4. Mix remaining herbs and garlic clove and rub into pork.

    5. Spoon fruit mix into pork and place in baking pan.

    6. Roast, uncovered, in 350 degree oven to an internal temperature of 160 degrees; about 45 minutes. Let rest 10 minutes before slicing.



    Final Comments


    This is good with buttered noodles, but I think it would be great with spaetzle.
