Ham Baked with Cider and Mustard

- 1 fully cooked ham (6.5 - 7 lbs)
- 2 c. sweet apple cider
- 1 1/2 T. stone ground mustard
- 18 - 24 whole cloves
- 1 1/4 c. coarse bread crumbs
- 1 1/4 c. light brown sugar
Instructions
- Score the ham in a crisscross diamond pattern with 1/4 “ deep slits 1 inch apart. Insert a clove in each diamond. Place the ham in a 9x13” non-reactive baking pan. Pour 1 c. cider over the ham and let it sit to come to room temperature. Let the ham sit for at least 1 hour.
- Preheat the oven to 300 degrees. Mix the remaining cider with the mustard. Spoon one-third of the mixture over the ham. Bake the ham for 30 minutes and spoon another third of the cider mixture over it. Bake for another 30 minutes.
- In a small bowl, thoroughly mix the bread crumbs and the brown sugar. Pat the mixture over the ham in an even layer. Reduce the heat to 275 degrees and bake for one more hour.
- To serve, transfer the ham to a cutting board. Pour the remaining third of the cider-mustard mixture into the baking pan and mix thoroughly with the drippings and accumulated cooking liquids, scraping up any brown bits clinging to the bottom of the pan. Transfer the sauce to a serving platter (defatting if necessary). Slice the ham thinly on an angle. Place the slices on the serving platter on top of the sauce. Serve at once.
Final Comments
We baked this a day ahead of time and served it cold. It was very good both hot and cold.
