    Jake at CooksKorner made this pork loin. It sounded so good and I had the perfect little pork loin in the freezer to do it with. I also had some packaged cooked bacon that Daddy had sent me - those worked perfectly with this recipe. No exact amounts - just general directions. I served this with red cabbage.

    List of Ingredients




    Pork loin roast
    Olive oil
    Minced garlic
    Thyme
    Spicy brown mustard
    Maple syrup
    Black pepper
    Bacon

    Recipe



    Preheat the oven to 350 degrees.

    Sear the pork loin on all sides in the olive oil in a saute pan over medium high heat. Let cool slightly. Make a paste of the garlic, thyme, mustard, maple syrup and black pepper. Coat the loin with the paste and wrap the bacon around the roast, tying with cooking twine, as needed.

    Place on a rack in a roasting pan and roast, uncovered, until it reaches 145 degrees. Let rest a few minutes before slicing.
