    Peppered Pork

    Easy, good, fast! Perfect work night meal!

    List of Ingredients

    2 pork tenderloins (about 2 lb. total)
    1 T. coarsely ground black pepper
    ½ c. white wine
    ½ c. chicken broth
    ½ c. reduced-fat sour cream
    2 t. country-style Dijon mustard

    Recipe

    Preheat oven to 350 degrees.

    Roll pork tenderloins in pepper to coat. Place in flameproof roasting pan. Roast for 30 -40 minutes until cooked through and temperature registers 160 degrees on instant-read thermometer. Remove tenderloins from pan and keep warm.

    Pour off fat in pan. Add wine. Place pan on burner over high heat; cook, scraping up browned bits, one minute. Add broth; cook, stirring, to reduce liquid by halt, 10 minutes. Remove from heat.

    Combine sour cream and mustard. Stir into pan. Slice pork. Serve with sauce.

    Serves 6.
