Pork Tenderloin with Savory Sauce

This is a very tasty and incredibly easy pork dish. I am always looking for good pork tenderloin recipes - it is low fat and inexpensive, but tends to be dry – this recipe comes out moist and delicious!
List of Ingredients
3/4 c. good chicken stock (I used better than bouillon)
1/4 c. balsamic vinegar
4 t. olive oil
2 T. port wine
1/2 t. black pepper
1/2 t. dried oregano
1 garlic clove, minced
1 t. cornstarch
2 T. cold water
1 1/4 lb. pork tenderloin, fat trimmed, cut into 1/4” medallions
Recipe
In a small saucepan, combine stock, vinegar, olive oil, port, pepper, oregano, and garlic. Cook, uncovered, over medium-high heat about 20 minutes, or until liquid is reduced to 1/2 cup.
Mix cornstarch and water and stir to fully dissolve. Add to the pan, stirring to mix well. Heat over medium heat, stirring until mixture thickens, about one minute. Cover, remove from heat and set aside.
Heat 2 t. oil in a nonstick skillet over medium-high heat. Add pork and sauté 3 – 4 minutes on each side, or until pork is no longer pink. [About 160 degrees.] Pour 2 T. sauce of sauce over each piece.
Serves 4.
