This was a good, fast, and easy meal. Perfect for a weeknight. I cooked the sausage for the entire time and I found them a bit overdone. Next time, I’ll add them after the first 20 minutes since they really only need to get hot.
List of Ingredients
14 oz. package cooked sausages – bangers, brats, kielbasa, etc.
18 oz. small potatoes, sliced 1/2 to 3/4-inch thick
12 oz. bag frozen pearl onions (eyeball this, you may not need all)
Olive oil
Pepper
Penzey’s Justice seasoning
Fruity HP sauce
Recipe
Heat oven to 400F. Line a baking sheet with foil and spray with cooking spray. Place the potato slices and onions on one half of the baking sheet, drizzle with a bit of olive oil, sprinkle with pepper and the Penzey’s seasoning and toss well. Place in the oven for 20 minutes.
Meanwhile, slice each sausage on the diagonal into about 3-4 pieces, drizzle with the HP sauce and toss well. After the potatoes have cooked for 20 minutes, spread the sausage on the other side of the baking sheet and place back in the oven for an additional 15 minutes. If the sausage is not hot, bake for an additional 5 minutes.
Serves 4-6.
