This recipe is a work in progress. I’ve been thinking about a teriyaki pork burger with pineapple for a while. The combination of flavors appealed to me a lot. This particular combination didn’t please me and it wasn’t until we were almost finished eating that I figured it out. The glaze that I used has sesame oil in it. I love sesame seeds, but not the oil. It makes everything taste burnt to me. I chose the glaze because I wanted the thickness of it, but I think that next time, I’ll just use teriyaki sauce. I liked mine with mayonnaise.
List of Ingredients
1 lb. ground pork
2 pinches salt
1/4 t. pepper
1 1/2 T. teriyaki sauce + more for basting
2 cloves garlic, minced
1 t. dried lemongrass
1 t. dried ginger
3 shakes galangal
3 slices pineapple
Cilantro
Spring onion, thinly sliced
Buns (brioche would be good)
Recipe
Mix the first 8 ingredients together and form 3 fairly loose patties. Refrigerate for an hour. Grill the pineapple slices, brushing with teriyaki sauce. Grill the burgers, brushing with teriyaki, until done. Place on buns, top each with a pineapple slice and garnish with cilantro sprigs and onions.
Serves 3.
