Recipe Introduction
Every time I go visit my Grandma Jean I steal one of the magazines in her living room. They never change! There are some there from the 1990’s! This time I snagged one from 2004 – 12 years ago! I actually found a lot of recipes that I’d like to try. This is one of them. It worked very well and was extremely simple. The chicken breast came out surprisingly tender and moist.
List of Ingredients
1 lb. boneless skinless chicken breasts, cut into large chunks
3 garlic cloves, minced
1 T. olive oil
1/2 cup apricot preserves
1/4 cup barbecue sauce
1/4 cup water
2 tablespoons onion soup mix
Hot cooked rice
Recipe
Heat oven to 375 F.
Brown the chicken and garlic in a skillet in the oil until browned on all sides. Place in a greased 8x8-inch square baking pan.
Mix together the preserves, BBQ sauce, water and onion soup mix in a small bowl and pour over the chicken. Bake, uncovered, for 25-30 minutes until chicken is done. Serve with the hot rice.
Serves 4.
