    Aunt San's Turkey & Dressing

    This is a VERY old recipe. It is from my great aunt, Clarene Denson. She was Bomo's sister and this recipe is most likely their mother's recipe. I sent out a request for family recipes and this is one that my cousin sent me. Its written like they wrote recipes years ago - general directions. What size turkey? What size recipe of cornbread? How many chicken livers and eggs? I can figure out how to cook a turkey until it's done, but the rest of it is a little vague. I am looking forward to trying this out, but I don't have any hope of making it taste just like Aunt San's. And, of course, the cook in me is wondering, "Where is the sage and poultry seasoning?" It also seems odd to have the turkey all ready before you even start the dressing. I think that I might make this a project when Momma is with me sometime so she can give me some guidance and answer some questions!

    List of Ingredients




    TURKEY:
    1 turkey
    1 bunch celery, chopped
    6 - 8 onions, chopped
    salt and pepper

    DRESSING:
    3 recipes cornbread
    cooked chicken liver
    8 - 10 chicken cubes
    8 - 10 cups water
    Hard boiled eggs, if desired

    Recipe



    Preheat oven to 350 degrees. Put turkey in large roaster and fill 1/3 full of water. Add chopped celery and onion to roaster. Season with salt and pepper. Bake, covered with foil, until done - several hours.

    Bake corn bread; cool.

    Remove turkey from roasting pan. Defat stock, add chicken cubes, water and remove some for gravy. Add cooked liver, cornbread and chopped hard boiled eggs to the stock. Cook uncovered until dry, stirring about every 20 minutes.
