Buffalo Wings

Recipe Introduction
These were really good wings. Crispy and juicy and spicy enough for me (though not for Michael and Jessica - they needed extra hot sauce). The amount of sauce is perfect - they were coated with it, but not WET with it. I added the honey. I remember seeing an episode of Tyler Florence's show "Tyler's Ultimate" where he was doing fried chicken. He went to some famous fried chicken place where the specialty of the house was fried chicken that was dipped in hot honey after being fried and I thought that sounded so good that I've always remembered it. Using the amounts of honey that it would take to coat a whole chicken's worth of pieces seemed a bit excessive, but I thought I'd add a bit to this recipe and it was great. I think that you could add even more.
List of Ingredients
WINGS:
1 cup all-purpose flour
1 tsp. salt
1/2 tsp. paprika
1/2 tsp. garlic powder
1/4 tsp. cayenne pepper
1/4 tsp. black pepper
20 chicken wing segments
Buttermilk
Oil for frying
SAUCE:
3/4 cup butter, melted
1/3 cup hot sauce
1 T. soy sauce
2 T. honey
1 T. lemon juice
Recipe
WINGS:
Place the wing segments in a bowl and cover with buttermilk. Let sit for up to one day in the refrigerator. Drain. Mix the flour, salt, paprika, garlic powder, cayenne and black pepper in a bown and dredge the drained wing segments, keep the flour - you'll be dredging the wings again. Refrigerate for one hour and dredge the chicken again.
Preheat the oil in a deep fryer or a Dutch oven to 375 degrees. Fry the chicken pieces for 13 minutes, turning once or twice, if needed.
SAUCE:
Mix all the sauce ingredients in a large bowl. When the chicken is done, drain it briefly on a wire rack and toss with the sauce.
