    Chicken Dijon – NO FAT

    This is really good! Easy and fast, too!

    List of Ingredients




    1/3 c. Dijon mustard
    2 T. honey
    2 T. lime juice
    1 T. water
    ¾ t. ground coriander
    1 ½ t. grated lime peel
    4 skinless, boned chicken breast filets (about 1 lb.)
    Chopped fresh cilantro

    Recipe



    Preheat oven to 350 degrees.

    Whisk together mustard, honey, lime juice, water, coriander and lime peel.

    Place chicken in shallow ovenproof casserole. Set aside ¼ c. mustard sauce, pour remaining sauce on chicken. Cover and bake 20 minutes. Uncover, spoon sauce from casserole on top and continue to bake, uncovered, for 10 minutes or until completely cooked. Put on a serving dish and keep warm.

    Add 2 – 4 T. of remaining sauce from casserole to reserve sauce and heat through. Pour sauce over chicken. Sprinkle with cilantro.

    Serves 4.
