Chicken w/ Caper Cream Sauce

Recipe Introduction
This is a yummy, low fat and quick dish. It is elegant and company worthy, but easy to master! The amounts are a little vague, use enough to get the consistency you want.
List of Ingredients
- 4 boneless, skinless chicken breast halves, poached
- 1 leek
- handful of parsley
- 1 shallot
- 2-3 garlic cloves
- white wine
- chicken stock
- salt and pepper, to taste
- nutmeg – a few scrapes
- evaporated skimmed milk
- 1 T. capers
Instructions
- Chop and sauté all vegetables in a skillet sprayed with Pam. Deglaze with a little wine. Add about 1 ½ c. chicken stock. Simmer and reduce to about half. Add about half the canned milk, nutmeg, salt and pepper and simmer until thickened. Add capers and chicken and heat until hot.
Final Comments
Serve with rice or pasta and snowpeas.
Serves 4.
